Cool Loaves

Cool the loaves in their loaf pans for 10 minutes, then remove them from the pans and allow them to cool completely on a wire rack. Tip: the loaves will continue to cook for a few minutes when they are first out of the oven Tip: taking them out of the pans allows them to "breathe" as they cool
