Pumpkin Gingerbread

This recipe is for two loaves of pumpkin gingerbread. It is a modification of a recipe found in the cookbook "Breakfast In Bed" by Carol Frieberg, a wonderful collection of Bed and Breakfast recipes. I added more spices, lots of fresh ginger, and lemon juice. It is easy to make, delicious, wonderfully moist and keeps very well.
