Preheat Oven; Peel and Grate Ginger
Preheat oven to 350 degrees F. Cut or break off enough pieces of fresh ginger to make 3 to 4 Tablespoons grated ginger. Peel, then grate coarsely as shown. Be generous, we are making 2 loaves!
Tip: younger ginger is more tender and less fibrous, but is smaller in size and requires more peeling
Tip: grate against the grain to avoid long fibers in the freshly grated ginger
